Payton's Pasta

Payton is a 5th grader at Harrison North Elementary. He enjoys cooking with his Mom (Aron). Payton also enjoys playing soccer and rollerblading. His Mom told me that he loves to pick fresh veggies from the garden and help her in the kitchen. This recipe is a family favorite...


  • 8 oz. Angel Hair Pasta (cooked)
  • 1/4 Cup Olive Oil
  • 1 T. Butter
  • 2 tsp. Garlic (finely chopped)
  • 1 Small Red Onion (sliced)
  • 6 Roma Tomatoes (diced)
  • 1/2 Lemon (squeezed for juice)
  • Freshly grated Parmesan Cheese

Cooking Directions

  1. Heat pan with olive oil, butter, and onion on high.
  2. Add garlic and roma tomatoes...cover and let simmer for 5 minutes.
  3. Spoon mixture over cooked pasta.
  4. Top off with the lemon juice and freshly grated parmesan cheese.
  5. Variations: Add spinach, zucchini, green peppers or black olives. You can also slice fresh mozzarella and place a piece on plate, then add your pasta with topping for a yummy surprise.
