Pineapple Nut Cake

Fantastic spring cake recipe...very refreshing!


  • 2 Eggs
  • 2 Cups Sugar
  • 1 Can Large Crushed Pineapple
  • 2 Cups Flour
  • 2 tsp. Baking Soda
  • 1 tsp. Vanilla
  • 1 Cup Crushed Walnuts
  • 1 8 oz. Cream Cheese, softened
  • 1 Stick Butter, softened
  • 1 1/2 Cups Powered Sugar
  • 1 tsp. Vanilla

Cooking Directions

  1. Mix together the following by hand, not mixer - Eggs, Sugar, Can of Pineapple, Flour, Baking Soda, 1 tsp. Vanilla, and Walnuts. Pour into 9x13 greased pan.
  2. Bake at 350 degrees for 35-40 minutes.
  3. Topping:
  4. Mix together with mixer - Cream Cheese, Butter, Powdered Sugar, and 1 tsp. Vanilla.
  5. Spread on cake while it is still hot.
  6. Top with crushed walnuts if desired.
